Preparations
Make sure your hands are dry and cool and that your equipment is dry too.
You need to pick a cool, dry and still environment in which to work. Heat, moisture and breeziness can all make it difficult to work with a leaf of gold as it will be inclined to fold, wrinkle or break.
Method
Using scissors cut out the requried shaped from the leaf whilst avoiding excessive finger contact with the gold.
Brush the chosen surface thinly with edible glue or confectioner's glaze, covering an area slightly large than that required for the gold leaf transfer. Position the transfer accurately and gently press.
Remeber, it cannot be repositioned after contact.
Leave for a minute and then peel off the backing paper with tweezers using a slow upward movement.
Allow 24 hours to dry hard.
Cake Techniques
There are many ways to use edible gold leaf in cake decoration – one of the most striking is to gild certain items, such as grapes, rose petals, and to intermingle them with ungilded ones to obtain a contrast.
Gold leaf works particularly well with white icing or black, but can fail to have much of an impact with yellow toned cake icing.
Dampen area on sugarpaste using cooled, boiled water. Apply Gold Leaf with a brush - adding a touch of sparkle to your work. The natural static electricity will cause the leaf to cling to the brush. Please note the leaf will not apply as a solid sheet, but in natural patches.
Advisory Information
Store in sealed containers in a cool dry place. Product is not effected by normal room temperature variation.
The colour(s) used complies with the EC Commission Directive 95/45EC specification.
Conforming with EU 1169/2011 regulations
Although not necessarily present in this particular product, the colours used across the entire icing colouring range may include colours E102, E104, E110, E122, E124 & E129 which may have an adverse effect on activity and attention in some children.
