Traditional Processing Method
Our Aztec Gold coffee is produced using the Fully Washed method, a time-honored technique favored by Colombian farmers. Selective handpicking ensures only the ripest cherries are harvested. The cherries are then pulped on-site, followed by fermentation in tanks for 26 to 36 hours. After fermentation, the parchment coffee is thoroughly washed and sun-dried on parabolic beds for up to 20 days, resulting in a clean and vibrant flavor.
