This process increases the hydrophilic sulphur containing compounds; S-allylmercaptocysteine (SAMC), S-allylcysteine (SAC) and S-mythyl cysteine. Kyolic garlic also contains hydrophobic compounds such as diallyl sulphide (DAS), diallyl disulphide (DADS), diallyl trisulphide, allyl methyl trisulphide, dithiins, and ajoene.
