For high fat content, oil based food colouring is better than food colouring gel. Food colouring gels are water based and so the water does not mix with fatty oils found in buttercream. Water based gels only dye the sugar in buttercream and not the butter itself, leaving inconsistent colours.

Food colouring oil can help create rich and vibrant colours that won't fade because the oil loves the fats found in chocolate and buttercream.
