The journey begins with 100% organically grown brown rice, which undergoes a slow and meticulous steaming process to create a dough. This step takes three to four times longer than processing white rice, preserving the natural integrity and nutritional value of the grain. The dough is then cooled with water and its texture is checked by hand to ensure perfect consistency.
Black pepper and naturally aged tamari are gently incorporated into the dough before it is shaped into traditional rice cracker forms. The crackers are then dried slowly on nets for over half a day to reduce moisture content and left to settle overnight. A second drying phase using far-infrared technology follows, removing remaining moisture to achieve the ideal crispness.
Finally, the crackers are carefully baked to perfection, resulting in a delicate, light, and irresistibly crispy snack that celebrates the rich heritage of Japanese rice cracker craftsmanship.
