Q: What's the difference between muscovado, demerara and golden caster sugar?

Muscovado (dark or light) is a less-refined, moist sugar with a strong molasses flavour, commonly used in rich baking like gingerbread and Christmas cakes -- dark muscovado has a more intense flavour than light. Demerara is a coarser, crunchy sugar often used to top baked goods or sweeten coffee and tea. Golden Caster Sugar is fine-grained, an everyday all-purpose sugar for baking where you want a lighter flavour and finer texture than muscovado or demerara. If a recipe specifically calls for one of these, it's generally best to use that type rather than substituting, since texture and flavour can affect the final result, particularly in baking. Billingtons also makes Golden Granulated Sugar (a general-purpose sugar) and Golden Icing Sugar (for icing and frosting), rounding out most everyday sugar needs.

Billingtons makes a full range of unrefined sugars, from dark and light muscovado through to golden caster, granulated and icing sugar, plus molasses.

Frequently Asked Questions

What's the difference between muscovado, demerara and golden caster sugar?

What is molasses, and how is it used?

Molasses (500g) is a thick, dark syrup, a by-product of sugar refining, used in baking (such as gingerbread) and some savoury cooking for its strong, distinctive flavour.

Is the Golden Caster Sugar organic?

Billingtons offers both a standard 1kg Golden Caster Sugar and a separate Organic Golden Caster Sugar (500g) -- check the product listing to select the organic version if that matters to you.

Can I substitute demerara for granulated sugar in a recipe?

Demerara's coarser texture and caramel-like flavour can change a recipe's result compared to fine granulated sugar -- it's often used for topping rather than as a like-for-like substitute in baking that calls for granulated sugar.

How should sugar be stored?

Store in a cool, dry place in a sealed container or bag, since sugar can absorb moisture and clump, particularly the moister muscovado varieties.

Let’s Hear What Our Customers Have To Say

Product and price are both 5 star. Courier awful. Tracking less than useless but seriously, these items are fabulous. And this was definitely the best price I’ve seen. I’ll put up with the longer delivery time. It’s not the seller’s fault at all. I’m telling all my T2D friends about these. The only crisp type snack...
